Pineapple Weed: Matricaria discoidea, also known as wild chamomile, the wrath that back yards across the Northern Hemisphere… but wait! Do I see the word DISCO in its Latin name? surely that means it’s Party Time and Party Time means COCKTAILS!

Pineapple Weeds imparts a beautiful pineapple scent and flavour, which had me thinking of a certain canned beverage ‘with a totally tropical taste’. So, I’ve combined it with Grapefruit, coconut water and a touch of homemade Watercress Bitters which adds the perfect herbaceous tang (substitute with a dash of Angostura Bitters for that Caribbean Vibe)

So, from this, a star was born, from backyard to beach…it had to be called a Backyard Beach.


50g Roughly Chopped Pineapple Weed, flowers and leaves

480ml Vodka

200g Sugar

200ml Water

2 Grapefruits, Juice and 2 strips zest

Coconut Water & Bitters to serve



1. Begin with the pineapple weed vodka. Add the washed weed to a large sterile kilner jar and cover with the vodka. Seal and sit in a cool dark place for 3 days.

2. Open the jar, it should have a waft of pineapple, if it does, you are good to go, if not sit for a day more.

3. Strain the liquid through a muslin into a sterile bottle. Store in eth fridge while you make the grapefruit syrup.

4. Add the zest, sugar and water to a small pan and bring to a simmer. Boil for 3-5 minutes, or until syrupy. Allow to cool completely then remove the zest and stir through the grapefruit juice.

5. Transfer to a sterile bottle and pop in the fridge.

6. When ready to serve add 50ml Pineapple Weed Vodka, 15ml Grapefruit syrup and 100ml Coconut Water to a cocktail shaker with a little ice. Shake for 30 seconds to chill, add a dash of bitters, and shake again to combine.

7. Strain into a glass and serve, in your swimwear, In a paddling pool, in your back yard….
