Beet & Oat Kefir Soup, Horseradish and Thyme

It costs nothing and can only make yourself and others happy. Like this soup, simple, cheap, and utterly smile making.

Ingredients:


800g Fresh Beetroot, cut into small dice

200g Leeks, sliced thin

1 Clove Garlic, roughly chopped

2 tbsp Olive Oil

500ml Vegetable Stock

100ml Kefir

50g Creamed Horseradish

3 Sprigs Thyme, leaves picked

Salt & Cracked Black Pepper to taste

Method:


1. Add the oil to a large pan and sweat the leeks with a pinch of salt until soft and translucent Add the garlic and cook 2 minutes more

2. Add the beetroot, thyme and stock and simmer for 10 minute or until tender.

3. Add the horseradish and transfer to a blender. When cool enough, blend until smooth.

4. Add the kefir, stir though and taste, adjust the seasoning to your liking then serve, piping hot, with extra kefir and copious amounts of soft squishy bread for dunking.
