Burnt Chilli & Ginger Speedy Noodles

I don’t know about you, but Noodles are my go to. Quick meal…noodles, comfort food…. noodles, light and fresh…. noodles and food NOW…. noodles. Any style, type or form and I am yet to find noodles that don’t push my buttons,

But then there is Rice. Please never ask me the ‘would you rather’ question, it’s like asking which Child you prefer.


These are quick, easy and so delicious, and also contain a mystery ‘secret weapon’ ingredient which makes the broth both umami packed and ridiculously delicious.


Ingredients:


1 Red Chilli

1 Thumb Ginger, sliced

2 tsp Marmite

300ml Hot Water

4-5 Mushrooms

1tsp Oil

Cooked Soba Noodles

Spring Onions, Sesame Oil & Boiled Egg to serve


Method


1. Annand go! Heat a dry pan on a high heat, add the whole chilli and cook until blistered. Chop into pieces and add to a small pan with the ginger, marmite and water.

2. Bring to a simmer and simmer for 5 minutes then strain through a sieve onto the noodles.

3. Meanwhile, sauté the mushrooms in the oil until crispy and dry. Add to the noodles with the garnishes and eeeeeeeat!
