The Pornstar, cocktail of choice for all middle-aged women of the noughties. Perhaps it’s the name? Perhaps it’s the cheeky shot of Prosecco?
So, with inspiration from @thealchemistuk, we have taken it up a notch and brought it straight into 2021 and beyond.
Caramelised Passionfruit adds a certain bitterness to this otherwise sweet drink. A shot of lime adds to the acidic tang of the Pineapple and a touch of egg white (or aquafaba) gives a silky mouthfeel.
Once you’ve tried this, there is no going back…
30ml Vanilla Vodka
20ml Passoa/ Passionfruit liqueur
50ml Pineapple Juice
5 ml Lime Juice
1 tsp Egg White
¼ tsp Brown Sugar
1 Passionfruit, cut in half
½ tsp Demerara Sugar
Ice to shake
1. Sprinkle the passionfruit halves with the Demerara Sugar and caramelise under the grill or with a blow torch. Set aside
2. Add 5-6 ice cubes to a Boston Shaker along with the vodka, Passoa, pineapple, lime, egg white, brown sugar, and the pulp from one of the caramelised passionfruit halves.
3. Shake well for 30 seconds then fine strain into a chilled martini glass. Top with the remaining passionfruit half and serve with the shot of Prosecco to chase.
