Caramelised Spicy Mushroom Donburi



Mixed Mushrooms, as many as you have, at least 2 handfuls.

1 Tsp Oil

5 tbsp Soy Sauce

100g Sugar

2 tbsp Rice Vinegar

1 tsp Minced Garlic

1 tsp Chilli Flakes

2 tsp Sesame oil

2 tsp Sesame seeds

Sushi Rice, Frozen Edamame defrosted, Crispy Garlic to serve


1. Make the sauce by adding the soy and sugar to a pan. Simmer for 5-7 minutes until the sugar has dissolved and the liquid begins to thicken. Add the garlic & chilli, cook for 1 minute more before removing from the heat and adding the rice vinegar. Set aside.

2. Tear or cut the mushrooms into pieces and heat 1 tsp Oil in a pan. Fry the mushrooms until they release their liquid, it evaporates and they begin to crispen at the edges.

3. Add the sauce to the pan and cook for 1 minute.

4. Remove and spoon onto Sushi Rice and drizzle with the sesame oil and seeds. Add the beans and top with the crispy garlic.
