I know, popsicles are for summer, crumble is for winter. But with the British weather as it is, I’m craving comfort food, but feel as if I need to be sporting shorts and flip flops and padding across the misty beach, wind channelling through my hair and rain lashing down, determined that I will enjoy summer.
So, I came up with these, and to be frank, they’re genius…. Try them and prove me wrong…

Ingredients:
200g Fresh Cherries, pitted
1 tbsp Golden Caster Sugar
35g Custard Powder
35g Caster Sugar
500ml Milk
½ tsp Almond Extract
50g Plain Flour
50g Demer ara Suger
50g Cold Butter
Pench Salt
Method :
1. Begin with the crumble. Preheat oven 180C. rub the butter inti the four with your fingertips then stir through the sugar and salt. Tumble onto a lined baking tray and bake for 15 minutes or until it looks toasted and biscuit coloured. Allow to cool then crumble into pieces. Store in an airtight box.
2. Add the cherries and sugar to a blender and blend to a purée. Pour into the bases of 10 lolly moulds. Pop in the freezer to set.
3. Add the custard powder and sugar to the base of a small pan and add 1 tbsp milk. Stir to form a paste then gradually add in the remaining milk. Heat until bubbling and thick then strain into a jug. Cover the surface with clingfilm and regrate until cold.
4. Pour the cold custard over the set cherry layer ad sprinkle some crumble over the surface. Pop back in the freezer and freeze overnight before turning out and enjoying, in the rain, on the beach, the next day….
