Chilli, Wakame & Lime Soba with Sea Salt Tofu

THE FIRST STEP TO GETTING SOMEWHERE IS TO DECIDE YOU ARE NOT GOING TO STAY WHERE YOU ARE


For me, a New Year doesn’t mean faddy resolutions, diets, or monthly adaptations to my routine. Change can happen at any time. And by change, I mean, life changes… achievable goals that I can shape into the remainder of my life.


I already follow a nutritionally balanced plant-based diet, but every now and then, I will give into my cravings, perhaps some processed food or a tub of ice cream. Because I realise that the Joy lies in not denying yourself. Cravings are just that, cravings. They aren’t permanent, but they will pester until you allow yourself that joy.


So, see the joy in your life and our body will find its own equilibrium. Cravings may be fruit, nuts, meat, or burgers…. Just remember that giving in is not failure…its success…

Ingredients:


200g Dried Soba Noodles

340g Block Firm Tofu

1 tbsp Cornflour

½ tsp Sea Salt Flakes

1 tbsp Rapeseed Oil

5g Dried Wakame

½ Cucumber, sliced into ribbons

Handful Rocket & Cress


Dressing


2 Green Chillies, finely sliced

2 Limes, Juices

3 tbsp Soy Sauce

1 tbsp Maple Syrup

1 tbsp Sesame Oil


Method:


1. Cook the soba in a pan of boiling water according to the pack instructions. Drain and rinse until cold water. Set aside.

2. Press the tofu and cut into 1 cm cubes. Mix with the cornflour and sea salt. Set aside for 10 minutes to form a skin.

3. Meanwhile, heat an air fryer to 180C (if not using an air fryer, heat 3 tbsp of Rapeseed oil in a shallow pan).

4. Mix the tofu with 1tbsp Rapeseed Oil and air fry for 8 minutes, or until crisp. If frying in a pan, fry for 2 minutes each side until golden and crisp. Drain and set aside.

5. Meanwhile, rehydrate the wakame in a little boiling water.

6. Add the dressing ingredients to a small jar, top with a lid and shake to combine.

7. Arrange the noodles on 2 plates, add half the tofu to each. Arrange the cucumber, wakame, rocket and cress and drizzle with a little dressing. Clarity in a mouthful.
