Citrus & Spice Cozy Village

Citrus and Spices just sing of warm kitchens, windows running with the scent of baking heady in the air. This Cake batter is adaptable to most tins, but for me It had to make these cute little houses, reminiscent of those in my own village, that outline the duckpond, each with its own little quirks and foibles.

Orange & Cardamom are a beautiful match. Bright yet earthy and full of soul. This will happily grace any Festive table.


270g Plain Flour, plus extra for the pan

350g Golden Caster Sugar

1 Orange, Zest & Juice

8 Cardamom Pods, crushed, seeds removed and ground

½ tsp Cracked Black Pepper

2 tsp Baking Powder

¼ tsp Bicarbonate of Soda

½ tsp Salt

220g Greek Yogurt, full fat, room temperature

250g Melted Butter, plus extra for the pan

4 Eggs, room temperature

1 tsp Orange Extract

1 tsp Almond Extract

Icing Sugar to dust, royal icing to decorate


1. Butter your pan (I use Nordic Ware Snowy Village) and lightly dust with flour, set in the fridge to chill. Preheat oven 175C

2. Mix the flour, sugar, orange zest, cardamom, black pepper, baking powder, bicarbonate of soda and salt in a bowl until homogenous.

3. In the base of a stand mixer, add the yogurt, orange juice, butter, eggs, orange & almond extracts. Beat for 1 minutes until incorporated than add in your dry ingredients.

4. Beat on low for 30 seconds until smooth, then increase the speed to medium high and beat for 1 minute more.

5. Weigh the batter and divide into two. Use one half to fill the 6 village moulds, each 2/3 full.

6. Bake for 20-25 minutes or until golden and springy to touch. Remove from the oven and stand 15 minutes then turn onto a wire rack to cool.

7. Wash the pan, grease, and flour again then fill with the remaining batter.

8. Repeat the cooking process.

9. Once cool, level the bases with a knife, decorate and dust with icing sugar.
