Courgette & Blackcurrant Ceviche, Buttermilk Lemongrass Leche De Tigre

This dish is the lovechild of two things that make me happy. Ceviche & Fresh Produce. Keeping the produce to what I have grown at home makes less of an environmental impact and makes me feel like if I can grow food to eat, I can do anything!

Ingredients


3 courgettes, sliced as fine as you can, a mandolin is good

Handful of fresh Blackcurrants, or other tart fruit, kiwi works well

200ml Buttermilk

1 Lime, ½ zest, all juice

1 tbsp Ginger, minced

1 tbsp Lemongrass, minced

2 Green chillies, finely chopped


Fresh Lemongrass & Blackcurrant leaves to garnish (you could also use mint)


Method:


1. Lay the courgettes in a pattern on your serving platter and sprinkle with blackcurrants.

2. Make sure all other ingredients are very cold before mixing.

3. Just before serving, drizzle some leche de Tigre over the courgettes and garnish with the torn leaves. Serve immediately.

4. Any spare leche de Tigre tastes amazing as a chaser mixed with Pisco!
