Cucumber & Grapefruit Mint Cooler

When you need to wake yourself up but don't want the low after a caffeine high, then this is for you. Refreshing and full of electrolytes to get you going, just the colour is enough to put a spring in your step. It is better made fresh to maintain that crispness. But it is so simple that's no big deal. Try adding a splash of white rum for a weekend tipple...



Ingredients


10 Fresh Grapefruit Mint Leaves

1 Lime, juiced

2 tbsp Demerara Sugar

1 Cucumber

Soda Water & Ice to serve


Method:

  1. Chop the Cucumber into rough chunks and blitz until smooth in a blender. pour through a sieve lined with muslin or kitchen paper. Do not force through the pulp as it will make your drink cloudier.

  2. Discard the pulp and divide the juice between 2 glasses. Add 5 Mint Leaves, 1 tbsp sugar and half the lime juice to each. Muddle together to bruise the leaves then top with ice and soda. Serve immediately, a sunny day and dry mouth are optional but recommended.
