10 Fresh Grapefruit Mint Leaves
1 Lime, juiced
2 tbsp Demerara Sugar
Soda Water & Ice to serve
Chop the Cucumber into rough chunks and blitz until smooth in a blender. pour through a sieve lined with muslin or kitchen paper. Do not force through the pulp as it will make your drink cloudier.
Discard the pulp and divide the juice between 2 glasses. Add 5 Mint Leaves, 1 tbsp sugar and half the lime juice to each. Muddle together to bruise the leaves then top with ice and soda. Serve immediately, a sunny day and dry mouth are optional but recommended.
