Elderflower & Rosemary Gimlet

As Mother Nature makes her adjustment from winter to spring, the days are filled with icy blasts and torrential downpours. It’s at this time that I crave a taste of the seasons to follow, fresh and floral, but with a herbaceous tang that stays true to the season we are in.

This is such a beautiful drink


40ml Gin

60ml Starlino Elderflower/ St Germain

40ml Lime Juice

10ml Rosemary Syrup

100g Sugar

100ml Water

5g Rosemary


1. Begin with the Syrup. Add the Sugar & Water to a small pan and dissolve over a low heat. Once dissolved, add the rosemary, increase the heat, and bring to a boil. Boil 3-5 minutes or until syrupy.

2. Allow to cool to room temperature then strain into a bottle and store in the fridge (this will keep for a year). Discard the rosemary.

3. When ready, add all ingredients to a mixing glass with a few ice cubes. Stir to chill then strain into a glass.
