Bank Holiday Drinkies are a must. But don’t let the non-drinkers feel as though they are missing out. Believe it or not, I am actually highly intolerant of alcohol and barely ever drink, in fact, its 3 years since I have had more than a taste. But I also suffer from FOMO, so I make sure I never miss a party by always upping my mocktail game.
This recipe makes far more syrup than you need, but it’s amazing on cakes and keeps for yonks.

Ingredients
100g Water
100g Caster Sugar
6 Fig Leaves
1 Pink Grapefruit, Juice
1 Lime, juice
Tonic water to top up
Method
1. Start with the syrup. Add the water, sugar and fig leaves to a pan, bring to a simmer and simmer until all the sugar has dissolved. Remove from the heat, cool completely then strain into a sterile bottle.
2. For the drink, add 20ml syrup, 20ml pink grapefruit juice and 20ml Lime juice to a cocktail shaker. Shake to combine then strain over ice. Top with tonic and serve.
