Ginger & Lime Chickpea Smash

Whenever I make homemade bagels, my brain is drawn towards Smoked Salmon, Cream Cheese & Avocado. There is just something about that classic combo on a chewy, malted bagel that is just so hard to beat.


But if I am honest, because I am a quirky soul, Smoked salmon, on occasion, makes me retch… don’t ask me why, probably because I think about it too deeply.


So, I am always coming up with Bagel fillings that sate that desire for something moist, flavoursome, and moreish to compliment that chewy goodness. This is one of them. Punchy, smooth, knobbly, and definitely not retch promoting.


Try it and you might just be swayed off smoked salmon for good…

Ingredients

400g Can Chickpeas, drained

2 cloves Garlic, minced

4cm Ginger, minced

1 Lime, zest & Juice

1 tbsp Olive Oil

Large Pinch Sea Salt Flakes

Large Grind Cracked Black Pepper





Method:


1. Add all ingredients to a pestle & mortar and smash to a chunky consistency with some puree. You are looking to combine all the flavours whilst retaining texture.

2. Scoop onto lightly toasted bagels with plenty of avocado.
