Lemon Meringue Pie Martini

Ingredients


200ml Vodka

100ml Limoncello

4 tbsp Lemon Juice

4 tbsp Lemon Curd


Italian Meringue


100g Caster Sugar

25ml Water

50g Egg Whites


Method:


1. Start with the meringue. Add the sugar and water to the base of a small pan. Add the egg whites to the base of a spotlessly clean stand mixer.

2. Dissolve the sugar over a low heat then increase the heat to high. When the mixture reads 115C on a sugar thermometer, begin mixing the egg whites.

3. Heat the sugar to 121C then quickly pour in a steady steam onto the whites whist whipping on low. Avoid the beaters, instead drizzle down the side of the bowl.

4. Increase the heat to just below high and beat for 10 minutes or until cooled, thickened and glossy. Transfer to a piping bag.

5. For the cocktail, combine all the ingredients in a shaker filled with ice. Shake vigorously until combined. Pour into a martini glass.

6. Pipe the meringue on top and either drink as is or torch with a blow torch.

7. Walk around with a meringue beard that will make Santa jealous….
