Lemongrass & Basil Sparkler

This cocktail tastes as verdant and fresh as it sounds. The ultimate drink of the summer, fragrant aromatics are at its core, lifted by the tropical scent of Rum and the quintessential taste of Elderflower. Pure Perfection in a glass.

This also works great without the alcohol, just double up on the syrup and lime juice and top with ice and soda.


Lemongrass & Basil Syrup

2 Lemongrass Stalks

20g Basil Leaves & Stems

180g Caster Sugar

200ml Water

For One Drink:

30ml White Rum

20ml Elderflower Liqueur (St Germain/ Starlino)

1tbsp Lemongrass & Basil Syrup

1 tsp Lime Juice

100ml Crémant to top up


1. Begin with the syrup well in advance so it has time to chill. Bash the Lemongrass with a hammer to expose all the fibres. Add to a pan with the sugar and water and dissolve over a low heat. Bring to a boil and boil for 3 minutes. remove from the heat, add the basil, and stir. Cover and allow to cool to room temperature.

2. Once cold, chill overnight then strain into a sterile bottle, store in the fridge.

3. When ready, add 4 ice cubes to a mixing glass, along with the Rum, Elderflower Liqueur, Lime Juice and 1tbsp Syrup. Stir clockwise for 30 seconds then strain through a hawthorn strainer into a tall flute. Top with crémant and serve.
