Lime Shiso Margarita with Pink Pitaya Salt

So in the UK we have no green areas to which we can travel. The long promised thoughts of Holidays abroad, seeking new sights and cultures, smells and sounds, have once again been postponed.

So I am making it my goal to travel through nourishment. Recreating memories evoked through flavours and aromas to give a subconscious smile that creeps across your face as you remember those Halcyon days gone by.

So this Margarita brings with it Mexican Beats, rotund booty doing ‘the bubble’ and whining the night away (maybe that’s just me…)

Make it, enjoy it and feel that glow from within

Ingredients

150g Lime/ Lemon Sorbet

60ml Tequila

50ml Lime Juice

30ml Triple Sec

Shiso Leaves & Lime Wedges

1tbsp Pink Pitaya Powder mixed with 1 tbsp Himalayan Salt

Method

  1. Add all the ingredients aside from the Shiso, Pink Pitaya, lime wedges and salt to a blender and blitz until smooth.

  2. Sweep a lime wedge around the rim of a margarita glass and dip the rim into the Pink Pitaya salt.

  3. Fill the glass with the sorbet mix and shred some Shiso leaves across the top.

  4. Serve immediately
