Mushrooms, Miso, Maple & Tahini on Sourdough

All too often we go about a circumbendibus way of creating our meals. Dilly dallying from one option to the next, trying to decide what you want, then finally opting for it all…..

This was one such creation. I had a batch of roasted mushrooms, but wanted some kind of Peanut Butter on Toast concoction, an also something little sweet.

And so this lovechild was born. everything I wanted and more. The best bit, it came together in 0.002 minutes, whoop!


250g Mixed Mushrooms

1 tsp Rapeseed Oil

1 tsp Sesame Oil

1 tbsp Shiro Miso

1 tbsp Maple Syrup

1 tbsp Tahini

Thyme & Grilled Sourdough to serve


  1. Ready, set go! Mix the Sesame Oil, Miso and maple in a bowl until smooth. Heat a frying pan over a medium high heat.

  2. Add the oil and mushrooms and cook, without turning until golden and caramelised, it's important to leave them alone as the caramelisation is the key to this dish.

  3. Turn the mushrooms and allow the other side to caramelise.

  4. Add the miso mixture and cook until the mushrooms are glazed and smelling beautiful.

  5. Pile onto grilled sourdough, drizzle with tahini and garnish with thyme.

  6. Devour and repeat....
