Mustard, Maple & Lemon Vinaigrette

This is everything a salad dressing should be, zingy, bright with just enough sweetness to counterbalance bitter leaves. Best friends with Watercress and Rocket, it really enhances their peppery note, but don’t leave it to cold salads, this is the perfect way to dress up spring brassicas like Purple Sprouting Broccoli, or more wintery staples like sweet potatoes or cauliflower.

Make a batch, store it in the fridge and use it on everything…

Ingredients:


2 tbsp Wholegrain Mustard

2 tbsp Lemon Juice

6 tbsp Olive Oil

1 tbsp Maple Syrup

Pinch of salt

1. Combine all ingredients in a jar with a tight fitting lid.
