Non Alcoholic Winter Pineapple Cordial


Pineapple, often reserved as a summer fruit. It has its season here in the UK in winter, so it seems apt to include its vibrant flavour amongst the heavy carbs that sate our winter desires.


This Cordial is fresh, zingy but with that hint of the holidays. Vanilla and Rosemary kiss its tropical tang with winter ice, making it perfect to serve to any non-drinkers this Holiday Season. It also tastes great mixed with champagne for a tropical twist on a Bellini.

Ingredients:


400g Pineapple, cut into small pieces

1 tsp Rosemary, chopped fine

1 Vanilla Pod, seeds scraped

1 Black Peppercorn (this makes all the difference)

250g Caster Sugar

5g Citric Acid Powder


Method:


1. Juice the pineapple in a juicer and pass through a fine sieve. Alternatively use ready made fresh juice to come to 250ml.

2. Add all the remaining ingredients, along with the juice to a blender and blend for 1 minute or until fully incorporated.

3. Pass through a muslin lined sieve and decant into a sterile bottle. Store in the fridge for up to a month.

4. To serve, dilute 1:3 with soda and top up with ice.
