BALANCE IS NOT SOMETHING YOU FIND, IT’S SOMETHING YOU CREATE
Everything has a natural equilibrium. When we interfere with faddy diets and restrictive behaviour, we throw our balance out. Everything in moderation and you will find that you crave a plethora of foods, from chocolate to bitter leaves. Try it, really LISTEN to what your body tells you, It’s kind of magic that way…

Ingredients:
2 Red Chicory, Leaves separated
4 Large Oranges, segments & Membranes removed, 1 Zested
100g Mixed Nuts
1 tbsp Soy
1 tbsp Maple Syrup
50ml Orange Juice
150ml Hazelnut Oil
1 tsp Sea Salt
½ tsp Cracked Black Pepper
Method:
1. Preheat oven 160C. Mix the nuts with the soy and the maple and roast for 15-20 minutes or until caramelised. Allow to cool, break into clusters and store in an airtight container.
2. Add the orange juice, hazelnut oil, sea salt & pepper to a jar and shake to combine.
3. Add the leaves and oranges to a large bowl and drizzle with 5 tbsp of the dressing.
4. Top with some of the nuts and serve with the extra nuts and dressing on the side.
