Less of a recipe and more of an ‘ooh, I must just use up those tomatoes’ these are great as they are as a side dish, or whizzed up into a glorious pasta sauce, or even a dip.

Ingredients:
All the tomatoes you need to use up
1 Bulb Garlic
3 Springs Thyme
2 Bay Leaves
50ml Olive Oil
Salt flakes and cracked Black Pepper
Method:
1. Preheat oven 180C. cut the top 1cm from the garlic bulb then tumble all ingredients, stalks and all onto a baking tray. Adding the tomato stalks will impart a glorious greenhouse flavour to the finished dish.
2. Roast for 20-30 minutes, or until just beginning to collapse.
3. Remove from the tin, squeeze the roasted garlic cloves over the tomatoes. Remove the herb and tomato stalks before smooshing everything together with a spoon.
4. Add a sprinkle of salt and a grating of black pepper and you are good to go!
