Pan Con Tomate

Not so much a recipe as a prescription for Summer Eating. Rub a chunk of bread with half a garlic clove, grate a tomato into a sieve over a bowl, reserve the juice as a salad dressing. Pop the grated tomato on the bread, drizzle with copious amounts of extra virgin olive oil, sprinkle with salt, eat in the sun…….
