Every year when Cinco de Mayo comes around, I always like to play homage to my Mexican friends with a cheeky Margarita. There is something about that salty, limey, icy kick that can’t be rivalled. It just screams of fun in the sun.
This year, having not been abroad in goodness knows how long, I am craving heat. So, this Pineapple Chilli concoction was born. It’s an absolute stunner.
Make them, get some friends in the garden and let the fun begin…

Ingredients
50ml Tequila
30ml Triple Sec, Cointreau
60ml Pineapple Juice
30ml Lime Juice
4 dashes Tabasco
Coarse Salt / Margarita Seasoning for the rim
Pineapple/ Lime Wedges
Plenty Of Ice
Method:
1. Add the Tequila. Triple Sec, Pineapple Juice, Lime and Tabasco to a cocktail shaker and fill with ice.
2. Shake vigorously to mix and chill with the ice.
3. Rub a lime wedge around the rim of a glass and dip in the salt or seasoning.
4. Strain the margarita into the glass and garnish with pineapple and lime. Serve straight away.
