Sakura & Sage Margarita

Ingredients:


Sakura & Sage Syrup


4 Cherry Blossom Flowers

2 Purple Sage Leaves

100g Caster Sugar

100ml Water


For one drink:


50ml Silver Tequila

15ml Rose Liqueur (Starlino or Lalique Rose)

25ml Lime Juice

1 ½ tsp Sakura Syrup


Cherry Blossom salt to rim (optional)

Method:


1. Begin with the syrup. Pour warm water over the blossoms and steep for 5 minutes. Meanwhile, add the sugar and water to a small pan. Heat over a low heat until the sugar dissolves then increase the heat. Bubble 3-5 minutes or until slightly reduced. add the blossoms and the sage, cover and cool completely.

2. Once cool, strain the syrup and decant into a bottle, this will keep in the fridge for 4 months.

3. When ready, add all ingredients for 1 cocktail to a shaker and add 4-5 ice cubes. Shae well for 30 seconds to chill.

4. A salt rim is optional, for this margarita I enjoy the subtle flavours without, I also prefer to drink this straight but, on the rocks, also works well.

5. Strain into your glass and sip your way into spring.
