Strawberry Maple & Tonka Oat Latte

Eating with the seasons is an inherent anthropological trait. Eat produce when its ready, not before and not after.

But sometimes the mind and body are not in sync, when my body is done with the chill of winter, I crave fresh summer favours. That’s where preservation comes to play. Summer strawberries, either dehydrated or freeze dried add a pop of summer sunshine to this winter warmer.


Tonka Beans, redolent with spice are the perfect addition to thus Vegan delight. I hope you love it as much as I do. A perfect addition to any valentine’s breakfast

Ingredients:


100g Oats

600ml Filtered Water

Pinch Sea Salt

3 tbsp Maple Syrup

20g Freeze Dried Strawberries, blitzed to a powder.

½ Tonka Bean, finely grated


Method:


1. Begin with the oat milk. Add the oats to a bowl and cover with water. Soak for 4 hours or overnight at room temperature.

2. Strain the mixture and discard the soaking water, rinse the oats for a few seconds to remove the excess starch.

3. Add the oats and filtered water, along with the salt to a food processor and blend for 2 minutes or until completely smooth

4. Line a sieve with some muslin and strain to give a delicious thick oat milk.

5. Add thus to a small pan with the maple and strawberries, whisk and bring to a simmer. Whisk vigourously to form a foam then pour into two mugs. Enjoy, tucked under the duvet with your loved one (or fur baby) bu your side.
