Confession: Whilst I love the flavour of Pumpkin Spice. A PSL has zero appeal. Often far too sweet, cloying and just leaves you feeling like you’ve just consumed sugar laden rock.
So, this my friends is the answer. All the flavour, all the freshness and all the sophistication that the kids in Starbies can’t muster.
Suddenly having friends’ round for “coffee’ just got boujie….

2 tbsp Maple Syrup
3 tbsp Boiling Water
2 tbsp Good Quality Instant Coffee
1/8 tsp Pumpkin Spice Mix
Ice & Tonic Water to serve
1. Fill 4 Collins glasses with ice and tonic water.
2. Add the maple syrup, water, coffee and pumpkin spice to a bowl and whisk with an electric hand whisk for 5 minutes or until you have a thick stable foam. You can also do this in a stand mixer or add everything to a kilner jar and shake until your butt wiggles (about 8-10 minutes…)
3. Spoon the foam onto the tonic and serve with a straw to allow the flavours to mingle.
