The Stolen Orchard

Every year I walk past the most beautiful Apple Tree in Blossom. It’s down a little lane, surrounded by the most fragrant Roses. Naturally they are calling me to sneak out Incognito and pilfer just a few……. Its okay, I always replace them with a little bottle of this drink, the scent of stolen orchards yet to come….

Apple Blossom yields fruit so only pick as much as you need.


Apple Blossom Syrup:

Enough Apple Blossom to half fill a 500ml Kiner Jar

200ml Water

150g Caster Sugar

For One Drink:

30ml Cachaça

20ml Rose Liqueur

10ml Apple Blossom Syrup

10ml Lime Juice

2 Dashes Lime Bitters

Ice to shake, Apple Blossom to serve


1. Begin with the syrup. Pick through the blossoms and make sure they are free from dirt and bugs. Add the blossoms to the kilner jar and cover with the water, pressing down to ensure they are all covered. Allow to infuse somewhere cool and dark for 12 hours.

2. Strain the water into a pan and discard the blossoms. Add the sugar and dissolve over a low heat. Increase the heat and bring to a boil. Boil for 3-5 minutes or until syrupy. Allow to cool to room temperature then refrigerate.

3. When ready, add all ingredients to a Boston Shaker with 3 ice cubes. Shake for 30 seconds to chill then strain through a Hawthorn Strainer into a chilled glass. Serve straight up, garnished with Fresh Apple Blossom
