Tiradito de Maracuya


Every moment is a new beginning. Don’t wait for certain events to take place for change to happen. If things are not working for you, change them.

As you can probably gather from my posts, January doesn’t have to mean change, as much as any other month. Seize the moment as and when.

Right now, I crave comfort foods as much as I crave fresh, light foods. So, I adapt my diet daily to suit my cravings.

This Vegan Tiradito is a form of ceviche, fresh with leche de Tigre spiked with passionfruit. A perfect start to a new beginning.


Leche de Tigre

1cm Ginger, peeled and bruised with the back of a knife

1 Clove Garlic, quartered and bashed with a knife

1 tbsp Coriander, roughly chopped

10cm Celery, roughly chopped

8 Limes, juiced

2 Passionfruit, pureed

2 tsp Amarillo Chilli Paste (substitute red chilli paste)

Pinch Salt.

2 Large Beetroot, thinly sliced on a mandolin

½ mango, Chopped small

½ Red Onion, finely sliced on a mandolin

Few Sprigs Coriander/ Cress/ sliced red chilli to serve


1. Begin with the leche de Tigre. Add the ginger, garlic, coriander & celery to a small bowl and cover with the lime juice. Stand for 15 minutes to infuse.

2. Strain through a fine sieve and add the passionfruit and chilli paste. Taste and add salt according to your liking. Set aside in the fridge to chill.

3. Arrange the chopped beetroot, mango & onion on 4 small plates. Drizzle with the leche de Tigre and stand for 10 minutes to marinade.

4. Garnish with coriander, chilli slices and cress and serve immediately.
