Vegan Banana Brownie Bars, GF & Refined Sugar Free

I created this recipe for a dear friend who needed to boost her energy and health before upcoming surgery. These are a perfect ‘grab and go’ snack. 100% Plant based and teeming with the good things in life! They’re so good I kept a couple for myself!


100g Rolled Oats

2 Bananas

3 tbsp Maple Syrup

1 tbsp Nut Butter

100g Medjool Dates

2 tbsp Cacao/Cocoa Powder

1 tsp Ground Cinnamon

Pinch Salt

50g Puffed Brown Rice (not Rice Crispies, they don’t stay crisp)

80g Dried Fruit, Chopped (I Used Cherries)

80g Walnuts, toasted and chopped (Toasting gives a much better flavour)

40g Pumpkin Seeds, toasted


1. Preheat Oven 180C, grease a 16 Bar Silicon Bar Mould and set aside.

2. Add the oats, bananas, maple syrup, nut butter, dates, cacao, cinnamon and salt to a blender and blitz until smooth.

3. Add this to the remaining ingredients and mix well to form a thick paste.

4. Using a damp spoon, pack this tightly into the moulds and pat down the tops.

Bake on the middle shelf for 12-15 minutes or until firm to the touch. Cool for 5 minutes before popping out of the mould to cool completely
