Vegan Chickpea Ranch Salad

When the festivities are through and you need something that nourishes both your body and your soul, this is the dish you need. All too often people feel the need to counter their joys with deprivation.


Excess and Enjoyment ARE PART of the holidays, they don’t need to be tainted with guilt or balanced in anyway. But sometimes you just feel the need for something fresh that you now will do you good.


This has taste, texture, and fuels you for the stresses ahead

Ingredients:


2 Cans Chickpeas, drained and lightly dried with a clean towel.

2 Shallots, minced

2 tbsp Capers, drained

3 Celery Sticks, finely sliced

2 Cloves Garlic, minced

200g Seedless Red Grapes, sliced in half

1 Cucumber, finely sliced

200g Pecans, toasted and roughly chopped

100g Vegan Mayo

100g Vegan Yogurt

20g Chopped Dill

20g Chopped Parsley

2 tbsp Lemon Juice

1 tbsp White Miso

1 tsp Maple Syrup

1 tsp Dijon Mustard

1 tsp Sea Salt Flakes

½ tsp Cracked Black Pepper

1 tsp Nutritional Yeast


Method:


1. Quite literally, tumble everything into a large bowl. Taste, adjust the seasoning and serve. Taste great scooped up with chunks of bread or stuffed into a jacket potato.
