VEGAN MUSHROOM, LEMONGRASS & KAFFIR LIME SOUP


This sounds like a crazy combination but it really works! Asian flavours pair so well with mushrooms and the Lemongrass & Kaffir Lime add a welcome freshness. A quick, easy and simple soup to add a bit of interest to those dull winter days.


INGREDIENTS:

500g Mushrooms, sliced

1 Potato, cut into 1cm cubes (no need to peel)

2 Sticks Lemongrass, peeled and finely sliced

4 Kaffir Lime Leaves

1tsp Ginger, crushed

1.2 Litres Water

3 tbsp White Miso

2 tbsp Dark Soy Sauce

2 tbsp Lime Juice


METHOD:

Put the mushrooms, potato, lemongrass, lime leaves and ginger in a pan and cover with water. Bring to the boil and reduce to a simmer. Simmer for 10 minutes or until the potato is tender. Remove from the heat, add the remaining ingredients and blend until silky smooth in a high speed blender. Taste, adjust the seasoning and serve.
