Vegan Rose Garam Masala Carrot & Beet Sandwich with Hummus & Chilli Nori Pecans

This sandwich crosses cultures and continents in its inspiration, buts stays true to its heart with Garam Masala & Rose playing alongside each other in the most fragrant of combinations. Hummus acts to add textural mouthfeel in combination with the pecans that add a much-needed crunch.

Perfect In Every Way



1 Loaf Malted Granary Bread cut into thick slices

6 tbsp Vegan Ketchup

1 tbsp Garam Masala

1 Tbsp Rose Petals

2 Drops Rose Water

5 Medium Sized Carrots, cut lengthways into 5mm slices

3 Small Beetroot, Cut into 5mm slices

2 tbsp Olive Oil

2 tbsp Maple Syrup

2 tbsp Soy Sauce

2 tsp Siracha


250g Cooked Chickpeas

50ml Lemon Juice

60ml Tahini

30ml Extra Virgin Olive Oil

2-3 tbsp Water

2 Clove Garlic Minced

Salt to taste

Chilli Nori Pecans:

170g Pecans

30g Aquafaba

20g Icing Sugar

1 tsp Nori Flakes

1 tsp Chilli Powder


1. Begin with the nuts. Preheat oven 150C. Whisk the aquafaba until frothy then whisk in the sugar, nori, and chilli. Add the pecans and coat.

2. Line a baking sheet with non-stick paper and spread the pecans out on it.

3. Bake for 20 minutes, stirring after 10.

4. Remove, allow to cool then roughly chop with a sharp knife.

5. Store in an airtight jar.

6. Increase oven to 170C

7. Mix the carrots & beets with the oil, maple, soy and siracha.

8. Tumble into a baking dish and bake for 30 minutes or until tender to a knife. Turn halfway through cooking. Set aside.

9. Meanwhile, mix the ketchup with the rose water, rose petals and garam masala. Pop in a container and set aside.

10. For the hummus, add all ingredients to a blender and blend until smooth. Taste the mixture and adjust the seasoning, you may need more salt or lemon juice.

11. To assemble. Spread one slice of bread with the ketchup mixture. Lay on some slices of carrot and beet and sprinkle over the pecans.

12. Spread the other slice with the spiced ketchup and sandwich together. Cut and repeat with the remaining bread and veg.

13. Eat, dribble, scoop with your finger, lick and enjoy.
