Wild Fennel Macerated Strawberries & Yogurt

Summer bring with it a wealth of fresh produce. Good produce needs little adornment, so whip this up in a flash, grab a spoon and soak up the sun...

Ingredients:


400G Fresh Strawberries

2 tsp Caster Sugar

1 tsp Fennel Seeds

A Few Fronds Wild Fennel

500g Thick Full Fat Greek Yogurt


Method:


  1. Preheat oven 200C. Place the strawberries, sugar and fennel seeds in a small roasting tin and cover tightly with foil.

  2. Roast 15 minutes then allow to cool to room temperature.

  3. Serve on mounds of yogurt, garnished with fennel fronds. This is best served at room temperature not cold.
