ME NA NA NA NA NA NA NA TEQUILA! Summer may be passing but you’ll still find me partying the night away (well until 9pm when its pyjamas and bed time…)
At least I will be rocking the (early) evening away with this and a heady dose of lime and a sprinkle of sea salt…..

Ingredients:
750g Wild Plums, stones removed (a food mill is great for this)
200g Caster Sugar
80g Agave Syrup
100ml Tequila
Sea Salt Flakes & Fresh Lime to serve
Method:
Add the plums, sugar and agave to a pan and bring to a boil.
simmer for 5-8 minutes to thicken and dissolve the sugar, this recipe does not use water to make a sugar syrup so it stays deliciously smooth and creamy.
Remove from the heat and stir in the tequila. Pop in the fridge to chill overnight.
The next day, churn in an ice cream machine according to the manufacturer's instructions. Alternatively, freeze until solid, then, using a large knife, process in batches in a food processor until smooth.
Freeze for 1 hour before scooping and serving with a shot of tequila, lime and sea salt and a long summer's evening...
