Wisteria Tea & Mushroom Soba

Whilst the seed pods and leaves of the wisteria plant are toxic, the flowers impart a beautiful chestnut flavour when steeped in hot water. Paired with earthy mushroom, sesame & soy, there is no bowl more comforting. Use this as a base for any plant-based protein you like.


Handful Wisteria Flowers (always ensure you are 100% certain what you have)

750ml Boiled Water

2 tbsp Soy Sauce

1 tbsp Sesame Oil

5cm Ginger, Grated

200g Soba Noodles, Cooked & Chilled

100g Sautéed Mushrooms


1. Add the Ginger & Wisteria Flowers to a Jug and pour over the boiled water. Set aside to steep for 10 minutes.

2. Meanwhile arrange the noodles and mushrooms between 2 Bowls.

3. Strain the Liquid and discard the solids, mix through the soy & sesame oil. Taste the liquid and adjust with salt or a touch of acidity if needed.

4. Pour over the noodles and serve lukewarm on a spring day
